Cheese on Toasts, anyone loves them?

So today, I've just had the best cheese on toast ever from Premiere Moisson's. I've just had : Turkey with tomatoes and spinach cheese on toast with smoked cheddar cheese and coffee from there too, yum. What's your favourite way of having cheese on toasts, or grilled-cheese, in American English?

I use cheddar cheese, a slice of tomato and bacon strips when I make a grilled cheese sandwich.
